This is so cute, I had to share.
I backed my car into the garage because it had started snowing. I stepped onto the deck and looked around, and I’ll be darned if I didn’t see these cute little hearts that my ‘driving skills’ or lack thereof, smiley face, created.
Fish Tacos w/corn tortillas

I enjoy making new dishes for my family. But some days, I don’t have a clue. So I looked in my pantry, freezer, refrigerator and decided. I think I’ll make some fish tacos.
So first I made myself a cup of tea. Love my Keurig. English breakfast black tea. As that brewed, I prepared the masa. Usually I make tortillas from scratch and haven’t tried this kind of flour for tortillas. I bought this flour for the tamales I made for Christmas/New Years.
- I let those sit while I prepared the Cod.
Could not find my ‘comal’, griddle used for making tortillas, so I had to use a plain griddle. I made four tortillas at a time. (Sorry, ’bout the images, didn’t think to check the pics before continuing on to the next task. Lesson learned : )
Pulled out my favorite Chile Gueritos. Compliments of my new friend, Chile Willie from Hatch, NM *who by the way ships his chile products any and everywhere.
- I tossed a few of these tasty peppers into my chopper hopper, and once those were done, I put them in a serving dish, and then tossed in the spinach leaves. I cut up the cod into medium chunks, once they were done baking. Served a dish for my husband, as he always likes to try my dishes. Thank goodness for that.
- Of course, you can make your tortillas any size, but remember, you have to have enough prepared cod for each one. Therefore, I made them small. They look smaller in Jim’s hands.
Prep, cook, and served in less than 45 minutes.

January 6, 1912 New Mexico became a state.
Although we have been a state for 100 years now, many still confuse our state with the country of Mexico. For example, My husband and I travel through different states, and when people find out we are from ‘New Mexico’, they ask if we need a passport. *Imagine that.
At 11:35 a.m. today, everyone is encouraged to ‘Honk If You Love New Mexico‘. (I hope that know one confuses the horn honking for anger, then we will end up seeing, ‘Breaking News’ all day long, with headlines reading tomorrow, ‘Road Rage Cases On The Rise’. ( just sayin’)
There are many activities planned for this weekend. You can attend the birthday party which will be held at the State Capitol in Santa Fe. *Of course, many of us will be at work and unable to attend. Maybe the governor will save me a piece of cake in the freezer.* or Saturday in Truth or Consequences’, Elephant Butte Dam a landmark dam, completed in 1916, rises 306 feet and stretches nearly 1,700 feet. will be open to the public, which by the way was closed on 9/11.

Travels for this year will include, Texas, Oklahoma, Kansas, Arizona, Colorado and of course, my neck of the woods, New Mexico.
